Why You Should Eat the Rainbow

A plate loaded with multiple colors is pleasing to both the eye and to the body.

(No, the title is not a reference to Skittles.) In the daily routine of eating breakfast, lunch, and dinner (not to mention a snack or two), most Americans do not eat the full wealth of produce available to them. It is well known that eating a rainbow of colorful foods has health benefits, but often, people do not take advantage of the delicious array. Mindfulness towards the colors we eat will produce not only a visually appealing diet, but an immensely nutritious one as well. Take a look below at what each color has to offer.


Take your ordinary red apple or your humble tomato. Red fruits and vegetables like these contain lycopene and anthocyanins. Only plants have these two phytochemicals. Red vegetation reduces the risk and can reverse certain cancers, reduces the risk of diabetes and heart disease, and improves skin quality and macular degeneration.

Orange & Yellow

Carrots, oranges, sweet potatoes, and lemons contain carotenoids, which give them their bright colors. Orange and yellow fruits and vegetables signal the decreased risk of heart disease and certain cancers, while promoting immunity, eyesight, healthy joints, and skin protection from the sun. They are also packed with vitamins like Vitamin C and fiber.


Green foods are loaded with everyone’s favorite, chlorophyll. Chlorophyll is rich in antioxidants and fiber. Green foods such as spinach, bok choy, kale, arugula, broccoli, and many others serve to detoxify the body and boost immunity, energy, tissue healing, and reduce cancer.

Blue & Purple

Anthocyanin and resveratrol are responsible for the memory and age-related benefits that blue and purple produce contain. These fruits and vegetables are able to reverse and protect against cell damage, Alzheimer’s, and inflammation. Eat your blueberries, eggplants, red (purple) cabbage and grapes, and all the rest. 


White may not seem to be a part of the “rainbow” of foods, but physically, white is the color that contains all colors. In this case, cauliflower, potatoes, mushrooms, garlic, and onions boast anthoxanthins, allicin, and quercetin. These are famous for keeping bones strong and keeping the heart healthy.
